Fried Green Tomato BLT

  1. Combine flour and garlic powder in shallow dish.
  2. Beat eggs in separate shallow dish until blended.
  3. Combine bread crumbs, cayenne pepper and paprika in third shallow dish.
  4. Dip tomatoes, 1 at a time, in flour mixture, turning to evenly coat both sides of each slice.
  5. Gently shake off excess flour.
  6. Dip tomatoes in eggs, then in crumbs, turning to evenly coat both sides of each slice with each ingredient.
  7. Heat oil in large skillet on medium-high heat.
  8. Add tomatoes, in batches; cook 3 to 4 min.
  9. on each side or until lightly browned.
  10. Drain on paper towels.
  11. Spread toast slices with Miracle Whip; fill with bacon, tomatoes and arugula to make 2 sandwiches.
