Fried Green Tomato BLT
- 1/2 cup flour
- 1 tsp. garlic powder
- 2 eggs
- 1 cup panko bread crumbs
- 1/4 tsp. cayenne pepper
- 1/4 tsp. smoked paprika
- 2 large green tomatoes, cut into 1/2-inch-thick slices
- 1/4 cup oil
- 4 slices multi-grain bread, toasted
- 2 Tbsp. Miracle Whip Original Spread
- 4 slices bacon
- 1/4 cup baby arugula
- Combine flour and garlic powder in shallow dish.
- Beat eggs in separate shallow dish until blended.
- Combine bread crumbs, cayenne pepper and paprika in third shallow dish.
- Dip tomatoes, 1 at a time, in flour mixture, turning to evenly coat both sides of each slice.
- Gently shake off excess flour.
- Dip tomatoes in eggs, then in crumbs, turning to evenly coat both sides of each slice with each ingredient.
- Heat oil in large skillet on medium-high heat.
- Add tomatoes, in batches; cook 3 to 4 min.
- on each side or until lightly browned.
- Drain on paper towels.
- Spread toast slices with Miracle Whip; fill with bacon, tomatoes and arugula to make 2 sandwiches.
