Melon Salsa
- 1 cantaloupe
- 1 lime, juice of
- 2 red chili peppers, deseeded and finely chopped
- 1 tablespoon mint, finely chopped
- 1 red onion, finely chopped (optional)
- Peel the melon with a knife, cut in half and scoop the seeds out.
- Chop the flesh roughly and add the remaining ingredients, mix well.
- Leave for about half an hour to allow the flavours to combine.
- Serve with grilled white meats or fish.
