Loaded Chicken and Potato Casserole
- 4 medium russet potatoes
- 1 packages chicken tenderloins
- 4 green onions
- 4 slice bacon
- 1 packages Casserole mix of cheese
- 1 butter
- 1 salt
- 1 pepper
- Preheat oven to 350.
- Cook bacon to almost done.
- You want it a little under done.
- Cut into smaller before cooking.
- Cut potatoes into small pieces.
- Take half of them and place them along bottom of casserole dish.
- Lightly salt and pepper.
- Cut chicken into small pieces and layer on top of potatoes.
- Salt and pepper lightly again.
- Cover in cheese.
- Take half of bacon and half of the green onions after chopping them up (green stalks only) and sprinkle onto layer.
- Take remaining potatoes and layer and them on top.
- Cover that layer in cheese and remaining bacon and green onions.
- Place 5 dots of butter on top before covering with cheese (I also put more bacon on top too)
- Cook covered on 350F for 1 hour.
- After that take cover off and cook for additional 30 minutes.
- Now just let cool and enjoy!
