Garlic-Herb Chicken With Peach Relish

  1. Combine all relish ingredients in bowl.
  2. Cover; refrigerate at least 1 hour.
  3. Combine all herb butter ingredients except butter in food processor bowl fitted with metal blade or blender container; process until well chopped.
  4. Add butter; process until smooth.
  5. Set aside.
  6. Heat 1 side of gas grill on medium or charcoal grill until coals are ash white.
  7. Place coals to one side in charcoal grill.
  8. Make aluminum foil drip pan; place opposite coals.
  9. Microwave herb butter until softened.
  10. Place chicken onto grill over drip pan; brush generously with herb butter.
  11. Grill, turning occasionally and brushing with herb butter, 20-22 minutes or until internal temperature of chicken reaches at least 165F and until juices run clear when pierced with a fork.
  12. Serve grilled chicken with relish.
  13. *Substitute 2 cups peeled, chopped fresh nectarine or mango.
