Soy Sloppy Joes
- 1 1/2 tablespoons light olive oil
- 1 medium onion, finely chopped
- One 12- to 16-ounce package soy crumbles (see note)
- One 16-ounce can or jar natural pizza sauce
- Fresh burger buns (preferably whole-grain) as needed
- Heat the oil in a large skillet.
- Add the onion and saute over medium heat until golden.
- Add the soy crumbles and saute over medium-high heat, stirring frequently, until lightly browned, 3 to 4 minutes.
- Stir in the pizza sauce and cook until heated through, 3 to 4 minutes.
- Serve at once on buns, open-faced or covered.
