Pear Almond Clafouti with Red Wine Glaze

  1. CLAFOUTI: Preheat oven to 375F (190C).
  2. Combine flour with 1 cup almond meal and baking powder in a bowl.
  3. Mix soy milk, fruit juice concentrate and vanilla and pour into flour mixture.
  4. Mix well and pat down into a 9" shallow cake or quiche pan.
  5. Combine remaining 1/2 cup almond meal with 13 cup apple juice concentrate and lemon juice and spread over dough.
  6. Arrange pear slices on top in a spiral pattern.
  7. Bake for 35 minutes.
  8. GLAZE: Combine wine and concentrate in a small pot and heat to a simmer.
  9. Dissolve arrowroot or cornstarch in an equal amount of water and whisk into wine.
  10. Cook until thickened.
  11. Brush while hot over pears.
  12. Serve hot or warm.
