Caribbean Spiced Tuna With Fresh Mango Salad
- 6 basil leaves, slivered
- salt, to taste
- 1 bunch chives, chopped
- 2 ounces virgin olive oil
- 1 ounce champagne vinegar
- 6 plum tomatoes, chopped
- fresh ground black pepper
- 2 mangoes, pitted and sliced
- 2 whole nutmegs, freshly grated
- 2 cinnamon sticks
- 12 ounce whole cloves
- 12 ounce fennel seed
- 12 ounce black peppercorns
- 4 thick tuna steaks
- FOR THE SALAD:.
- Combine all ingredients and allow to marinate in the refrigerator for 4 hours.
- Meanwhile, prepare the rub:.
- FOR THE RUB:.
- Place the cinnamon sticks, cloves, fennel seeds and peppercorns in a spice grinder or coffee grinder.
- Process until finely ground.
- Add the freshly grated nutmeg and combine well.
- FOR THE FISH:.
- Coat the fish with the spice rub and pan sear to rare or medium rare.
- Serve immediately, with the mango salad on top and alongside.
