Fajita Lime Grilled Chicken
- 1- 1/2 teaspoon Chili Powder
- 1- 1/4 teaspoon Ground Cumin
- 1/4 teaspoons Cayenne Pepper
- 1/2 teaspoons Onion Powder
- 1/2 teaspoons Garlic Powder
- 1/4 teaspoons Adobo Powder
- Kosher Salt And Freshly Ground Pepper, To Taste
- 2 Tablespoons Olive Oil, Divided
- 2 Tablespoons Fresh Lime Juice
- 6 Boneless, Skinless Chicken Breasts
- 1 Large Vidalia Onions, Quartered And Thinly Sliced Crosswise
- 1 Large Red Bell Pepper, Cored, Seeded, And Cut Into Strips
- 3 cloves Garlic, Smashed And Minced
- Heat you grill to 350 F.
- Mix the chili powder, cumin, cayenne, onion powder, garlic powder, adobo powder, salt and pepper in a small mixing bowl.
- Add half of the olive oil and half of the lime juice into the bowl and mix to make a paste.
- Rub the chicken on both sides with the spice rub.
- Put the chicken onto the hot grill.
- Grill the chicken until cooked through flipping once.
- Cook time should be about 4-5 minutes per side depending on the thickness of your chicken breast.
- When done remove them from the grill to a clean plate.
- Cover loosely with foil, and keep warm
- Meanwhile, heat the remaining half of the oil in a large skillet over medium-high heat.
- Add the onion, bell pepper, and 1/2 teaspoon each of salt and pepper.
- Cook, stirring occasionally, just until the vegetables begin to soften, 3 to 4 minutes.
- Stir in the garlic.
- Stir in the remaining half of the lime juice.
- Transfer to a bowl, cover loosely with foil, and keep warm.
- Serve the chicken alongside the peppers and onions.
- You can serve them with your favorite Mexican rice dish or slice chicken and serve in warm tortillas.
