My Friendship Cake
- 1 12 cups apricot brandy
- 2 cups sugar
- 19 ounces sliced peaches, & juice mashed
- 2 cups sugar
- 19 ounces crushed pineapple in juice
- 2 cups sugar
- 20 ounces maraschino cherries (cut up & juice)
- 2 12 cups raisins
- 4 (18 ounce) boxes Betty Crocker Super Moist cake mix (Yellow or White)
- 4 cups chopped nuts
- 16 eggs
- 1 12 cups oil
- (Day 1) Use large glass covered bowl but not airtight needs to stay at room temperature.
- Mix Brandy,sugar, and peaches.
- Stir every day for the next 10 days.
- (Day 10) Add Sugar and crushed pineapple & juice.
- Continue stirring every day for the next 10 days.
- (Day 20) Add sugar, marachino cherries with juice and dry raisins.
- Mix together & stir for the next 10 days.
- (Day 30) Preperation and cooking of loaves.
- Drain fruits from bowl.
- Leftover juice will give enough for 5 starters.
- Which must be used withing 2 days.
- Do not freeze juice, must be kept at room temperature.
- Add 2 boxes of Betty Crocker "super Moist" cake to fruit in a large bowl.
- Add chopped nuts.
- Stir well.
- In another large bowl beat eggs and oil and 2 more cake mixes.
- Add all together and mix well.
- Pour into seven or 8 greased & floured aluminum loaf pans.
- Cook in oven 325F 50 - 60 minutes or more.
