Aubergine And Feta Sandwich Recipe

  1. Cut each aubergine lengthwise into six slices.
  2. Heat some extra virgin olive oil in a frying pan and fry the aubergines in batches till tender and golden.
  3. Remove with a slotted spoon and keep hot.
  4. Mash the feta in a bowl till soft then stir in the tomatoes cucumber chilli dill and plenty of black pepper.
  5. Check seasoning.
  6. To serve place one wann slice of aubergine on each plate.
  7. Spread over a sixth of the feta mix then top with another slice.
  8. Leave for a couple of min so which the heat of the aubergine slightly melts the fete mix then serve.
  9. Don't season the mix with salt as feta is fairly salty.
  10. Serves 6
