Iced Strawberry Ring

  1. Place the cream, Cointreau and powdered (icing) sugar into a bowl and whip until it stands in soft peaks.
  2. Break the meringues into pieces and fold into the cream.
  3. Turn into a 2 1/2 pint (1.5 litre) ring mould.
  4. Cover with foil and freeze until firm.
  5. Turn out onto a serving dish 20 minutes before serving and place in the refridgerator.
  6. Fill the center with strawberries.
