S'more Cupcakes
- 1 pkg. (2-layer size) devil's food cake mix
- 2 cups thawed Cool Whip Whipped Topping
- 9 oz. Baker's Semi-Sweet Chocolate, broken into pieces, divided
- 1/2 cup graham crumbs
- 24 Jet-Puffed Marshmallows
- Prepare cake batter and bake as directed on package for 24 cupcakes; cool completely.
- Microwave Cool Whip and 3 oz.
- chocolate in microwaveable bowl on HIGH 1-1/2 to 2 min.
- or until chocolate is completely melted and mixture is well blended, stirring after each minute.
- Cool 10 min.
- Reserve 1/4 cup chocolate mixture; set aside.
- Place graham crumbs in small bowl.
- Dip tops of cupcakes, 1 at a time, in remaining chocolate mixture, then in graham crumbs turning to evenly coat top of each cupcake with chocolate mixture then crumbs.
- Heat broiler.
- Place cupcakes on rimmed baking sheet.
- Top with marshmallows, using 1/2 tsp.
- of the reserved chocolate mixture to attach marshmallow to each cupcake.
- Broil, 6 inches, from heat, 1 min.
- or until marshmallows are puffed and toasted.
- Garnish with remaining chocolate pieces.
