Triple-Decker Chicken Clubs

  1. In a large bowl, combine mayonnaise and pepper.
  2. Stir in chicken and apple.
  3. Place a lettuce leaf on 4 of the toasted bread slices.
  4. Top lettuce with tomato slices and bacon, then another slice of bread.
  5. Top with remaining lettuce; spoon chicken mixture on lettuce.
  6. Top with remaining bread slices.
  7. For smaller sandwiches, use 8 slices bread and 4 lettuce leaves.
  8. assemble sandwiches as directed, omitting the middle layer of bread and lettuce.
