Apricot And Date Chutney Recipe

  1. Soak the apricots overnight in water to cover.
  2. Drain, place all the ingredients in a large saucepan.
  3. Cover with vinegar and mix well.
  4. Bring to the boil and cook very slowly for 2 hrs, till a good brown, slow and thick.
  5. If too thick, add in more vinegar during cooking.
  6. Spoon into clean jar.
  7. Seal and water bathe.
