Smoked Italian Chicken

  1. Mix ingredients together and marinate chicken overnight.
  2. Set up grill for Indirect Heat.
  3. Smoke chicken at 350F with hickory chips for about 1 hour and 15 minutes.
  4. When the internal temperature of chicken is 165F remove from the grill.
  5. Cover with aluminum foil and let rest for 15 minutes before carving and serving.
