Not Your Momma's Chicken Soup
- cooking spray
- 1 lb boneless skinless chicken breast, diced
- 1 large onion, thinly sliced
- 1 red bell pepper, diced
- 2 garlic cloves
- 3 cups chicken broth
- 14 cup soy sauce
- 9 ounces frozen spinach
- 15 ounces chickpeas, drained & rinsed
- 13 ounces light coconut milk
- 1 teaspoon dried ginger
- 14 cup cilantro, chopped
- Coat the inside of a Dutch oven with spray oil.
- Heat over medium high heat and cook chicken until light browned, about 8-10 minutes.
- Remove chicken from pan and set aside.
- Add onions, bell peppers, and garlic to pan and saute for just a few minutes until the ingredients are tender crisp.
- Return the chicken to the pan and add the chicken broth and soy sauce.
- Bring to a boil, reduce heat and simmer covered for about 15 minutes.
- Add spinach, chickpeas, coconut milk and ginger.
- Simmer for an additional 10 minutes or until heated through.
- Add cilantro and serve.
