Lower-Fat French Onion Soup

  1. In large nonstick skillet, heat oil over medium heat.
  2. Add onions, thyme and 1 tablespoon water.
  3. Cover; cook 5 minutes. Uncover; reduce heat to medium-low.
  4. Cook until onions are golden, about 15 minutes.
  5. Add garlic; saute for 1 minute.
  6. Add flour; reduce heat to medium.
  7. Cook, stirring, for 2 minutes.
  8. Stir in broth, remaining water and nutmeg.
  9. Bring to a boil; skim off foam.
  10. Cover and simmer for 30 minutes.
