Black Bean Mango Salsa Recipe
- 1 c. Black beans, cooked
- 2 whl mangos, peel, seed, chop
- 1/2 x Red bell pepper, diced
- 1/2 x Green bell pepper, diced
- 1/2 x Red onion, diced
- 3/4 c. Pineapple juice
- 1/2 c. Fresh lime juice
- 1/2 c. Cilantro, minced
- 2 Tbsp. Grnd cumin
- 1 sm Jalapeno, or possibly chile of choice Salt and pepper, to taste
- Throw the whole mess together, let flavors combine for at least and hour.
- If mangos aren't too ripe, this can last for up to 4 days covered in the fridge.
