Gazpacho with Herbs and Chiles
- 4 cups tomato juice
- 1 red onion, finely chopped (about 2 cups)
- 1 cucumber, halved, peeled, seeded, finely chopped (about 1 1/2 cups)
- 1 red bell pepper, finely chopped (about 1 cup)
- 1 yellow bell pepper, finely chopped (about 1 cup)
- 2 tomatoes, seeded, finely chopped (about 1 cup)
- 1/4 cup Champagne vinegar or white wine vinegar
- 1 1/2 tablespoons chopped seeded jalapeno chile
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon chopped fresh parsley
- 1 garlic clove, minced
- 3/4 teaspoon hot pepper sauce
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Mix all ingredients in large bowl.
- Cover and chill until cold, at least 2 hours.
- (Can be made 2 days ahead.
- Keep refrigerated.)
