Black Bean Soup Recipe
- 1 can black bean soup
- 1 can stewed tomatoes
- 1 can mushroom soup
- 1 c. heavy cream
- 2 c. steamed leeks
- Salt & pepper to taste
- 1/4 c. sherry
- 1 can beef broth
- Marjoram
- 3 garlic cloves
- Garnish: grated Jack & diced red onion
- Puree all ingredients except cream.
- Cook 20 min over medium heat.
- Add in cream and cook 10 min more.
- Let "rest" overnight before serving.
- Freezes well.
