Borscht A Famous Russian Soup Recipe
- 1 bunch beets
- 1 c. fresh tomatoes (or possibly canned)
- 4 c. water
- 1 sm. onion (cut up)
- 1/2 pound breast of beef
- 1 tbsp. lemon juice
- 1/4 c. sugar
- 1/4 teaspoon salt
- 4 Large eggs
- Pare beets and cut into strips.
- Strain tomatoes over beets, letting no seeds through.
- Add in water.
- Add in minced onion and meat.
- Cut into small pcs.
- Simmer for 30 min.
- Add in lemon juice, sugar and salt.
- Boil 30 min more.
- Beat the Large eggs with healthy pinch of salt.
- Add in the warm borscht to this, a little at a time, stirring well to prevent the separating of Large eggs.
- This will be something like a soft custard mix.
- Serve at once while very warm.
