Water Chestnut Appetizers

  1. Cut each water chestnut in half (I like to leave them whole, though) and cut the slices of bacon in half.
  2. Wrap a bacon slice around each water chestnut half.
  3. Secure with a toothpick.
  4. Place in a broiler pan and broil until bacon just starts to brown.
  5. Turn once to brown the other side.
  6. Watch closely and do not let the bacon get crispy brown.
  7. Prepare the sauce by combining the sugar, cornstarch and juice.
  8. Cook until thickened.
  9. Add the vinegar and pour over the broiled chestnuts.
  10. Transfer to a chafing dish.
  11. Makes approximately 50.

water chestnuts, bacon, brown sugar, cornstarch, pineapple juice, white vinegar
