Water Chestnut Appetizers
- 1 can Whole Water Chestnuts
- 1 pound Bacon, Thinly Sliced
- 1/2 cups Brown Sugar, Packed
- 4 teaspoons Cornstarch
- 1- 1/2 cup Pineapple Juice
- 1 Tablespoon White Vinegar
- Cut each water chestnut in half (I like to leave them whole, though) and cut the slices of bacon in half.
- Wrap a bacon slice around each water chestnut half.
- Secure with a toothpick.
- Place in a broiler pan and broil until bacon just starts to brown.
- Turn once to brown the other side.
- Watch closely and do not let the bacon get crispy brown.
- Prepare the sauce by combining the sugar, cornstarch and juice.
- Cook until thickened.
- Add the vinegar and pour over the broiled chestnuts.
- Transfer to a chafing dish.
- Makes approximately 50.
