Chicken and Broccoli Stir Fry
- 2 garlic cloves
- 12 cup onion
- 1 lb boneless skinless chicken breast
- 4 cups broccoli
- 1 cup sliced carrot
- 1 cup bean sprouts
- 2 teaspoons dried chicken bouillon
- 1 cup water
- 1 tablespoon cornstarch
- 2 tablespoons soy sauce
- steam carrots and broccoli and set aside.
- coat a large skillet with cooking spray and add onion and garlic.
- cut chicken into bit size pieces.
- add chicken and cook until browned on all side
- stir together the bouillon and water and add to pan, bringing to a boil.
- stir together the cornstarch and soy sauce until smooth and slowly add to skillet while stirring ( clumps may form, i usually use a whisk for this part)
- add the bean spouts and cook until tender.
- add the broccoli and carrots and coat with sauce.
- great over rice.
