Potato Patties
- 3 large potatoes, peeled and cubed
- 2 tablespoons butter or 2 tablespoons margarine
- 14 cup milk
- 1 egg, beaten
- 14 teaspoon salt
- 18 teaspoon pepper
- 1 12 cups crushed corn flakes
- In a medium saucepan, cook potatoes in boiling water for 15 minutes or until tender.
- Drain well.
- Mash potatoes well.
- Stir in butter, milk, egg, salt and pepper.
- Beat until smooth.
- When mixture is cool enough to handle, scoop out 1 inch balls.
- Flatten and roll in crushed crumbs and place on a greased baking sheet.
- Bake for 15 min at 450 or until browned.
- Turn once halfway through cooking.
