Brazos Turkey Chili Recipe
- 1 lg. yellow onion, minced
- 6 garlic cloves, chopped
- 2 tbsp. cumin seed
- 6 tbsp. extra virgin olive oil, divided use
- 2 red bell peppers, seeded & minced
- 2 Polano peppers, seeded & minced
- 2 Jalapenos, seeded & minced
- 2 Serranos, seeded & minced
- 1 c. Ancho and New Mexico red chili paste
- 3 tbsp. red chili pwdr
- 1 tbsp. each: grnd coriander, cinnamon & black pepper
- 2 lbs. grnd turkey
- 4 c. tomatoes with juice, minced
- 2 c. chicken stock
- 1 c. Mexican beer
- 1 (7 ounce.) can Chipotle peppers in Adobo sauce, coarsely minced
- 1/4 c. grated unsweetened chocolate
- For Garnish: minced green onion
- Cilantro
- Cheese, grated
- Fried tortilla strips
- Lowfat sour cream
- Saute/fry onion, garlic and cumin in 3 Tbsp.
- extra virgin olive oil till transparent.
- Add in minced peppers and saute/fry over medium heat about 10 min.
- Add in chili paste, chili pwdr, coriander, cinnamon and pepper.
- Saute/fry 5 min and set aside.
- Brown turkey in remaining extra virgin olive oil.
- Add in tomatoes, chicken stock and beer and chiptles.
- Simmer slowly 30 to 45 min.
- Just before serving, stir in chocolate.
- Garnish with minced green onions, cilantro, grated cheese, tortilla strips and lowfat sour cream.
- Makes 8 to 10 servings.
