Picadillo
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon cumin seeds
- 1 small sweet onion, chopped
- 1 medium red bell pepper, chopped
- 4 garlic cloves, minced
- 1 1/2 pounds ground beef chuck
- 1/2 cup sliced pitted green olives
- 1/3 cup raisins
- 1 tablespoon dried oregano, crumbled
- 1/4 cup Worcestershire sauce
- One 15-ounce can tomato sauce
- 1 cup beef stock or low-sodium broth
- Salt
- Freshly ground pepper
- Steamed rice, for serving
- In a large, deep skillet, heat the olive oil until shimmering.
- Add the cumin seeds and cook over moderate heat until fragrant, about 30 seconds.
- Add the onion, bell pepper and garlic and cook, stirring occasionally, until softened, about 5 minutes.
- Add the ground beef, olives, raisins and oregano and cook, breaking up the meat with a wooden spoon until no longer pink, about 8 minutes.
- Add the Worcestershire sauce, tomato sauce and stock and season with salt and pepper.
- Cover and simmer over low heat for 20 minutes.
- Serve with steamed rice.
