Wallie's Beef Jerky
- 5 lbs lean beef (approximate)
- 5 cups water
- 3 tablespoons pepper
- 1 tablespoon onion salt
- 1 tablespoon msg
- 1 tablespoon dry mustard
- 12 cup Hi Mountain hickory blend jerky cure (You can also use Morton's Tender Quick Home Meat cure)
- 2 tablespoons paprika
- 13 cup unbleached cane sugar (do not substitute)
- 1 tablespoon garlic salt
- 13 cup Worcestershire sauce
- MIx all ingredients (this is the marinade)
- Cut lean meat in 1/4 inch slices.
- and marinade 6 hours or overnight.
- Drain and blot meat to remove any remaining moisture.
- Do not rub off the black pepper.
- Smoke at 150-200 degrees 6-8 hours.
