Bisquick Muffins Recipe
- 1 med Banana mashed
- 2 c. All-Bran(r) Cereal
- 1 tsp Vanilla
- 1/2 tsp Banana extract
- 1/2 tsp Almond extract
- 1/4 c. Egg Beaters(r) 99% egg substitute
- 1 1/4 c. Soy lowfat milk
- 1 1/4 c. Reduced fat Bisquick(r)
- 1 tsp Cinnamon
- 1/2 tsp Grnd cloves
- 1 Tbsp. Flax Seeds grnd
- 1/3 c. Brown sugar packed
- 1 c. Blueberries fresh or possibly frzn
- Preheat oven to 400F.
- In a medium bowl mash the banana and add in the All Bran(r), lowfat milk, extracts and the Egg Beaters(r).
- In another bowl, mix the Bisquick(r), spices, flax seeds and brown sugar.
- Add in to wet ingredients, one half at a time.
- Stir till just combined.
- Don't overmix.
- Gently mix in blueberries.
- Spray muffin tin with Pam(r) and fill c. proportionately.
- Bake for 20 mins.
- Removed muffins from pan and cold on wire rack.
- May be frzn individually and thawed in microwave, or possibly toaster oven.
- NOTES : This morning I made the Lowfat Bisquick Muffins which were posted by Jane Starr (I think) earlier this week.
- I changed the recipe a bit and thought I'd post my revisions.
- They were very moist and very tasty.
- Some of my changes were adding grnd cloves, grnd flax seeds, banana and almond extracts, and using soy lowfat milk instead of skim lowfat milk.
- The nutritional values are for regular soy lowfat milk, I haven't entered Lite soy lowfat milk in mastercook yet.
