Portobella Pizza

  1. preheat oven to 400
  2. Chop all ingredients other than portobella
  3. Saute onions in olive oil til they start turning brown
  4. Add leeks, squash, and garlic and saute 5 minutes.
  5. Add tomatoes saute another 2 minutes.
  6. Add basil, stir ingredients, and squeeze lemon over mixture.
  7. Saute another 2 minutes.
  8. Optional: add salt, pepper, and/or a bit of sugar to mixture
  9. Spoon mixture into mushrooms
  10. Bake on 400 for 10 minutes.
  11. Top off with cheese, sprinkle with parsley, and return to oven for 5 min or until cheese melts/ turns brown
