Chicken Piquant Recipe
- 1 doz. chicken parts (or possibly 6 chicken breasts)
- 1 pound mushrooms, sliced
- 3/4 c. white or possibly rose wine
- 1/4 c. soy sauce
- 2 tbsp. extra virgin olive oil
- 2 tbsp. brown sugar
- 4 tbsp. water, mixed with 2 tbsp. cornstarch
- 2 garlic cloves, chopped
- 1 teaspoon oregano
- Pepper to taste
- Place sliced mushrooms in the bottom of a casserole dish.
- Top with chicken.
- Mix the remaining ingredients and pour over the chicken.
- Bake uncovered in a 350 degree oven for 1 1/4 to 1 1/2 hrs.
- Baste the chicken occasionally with the juices in the casserole.
- Serves 4-6.
- Note: Can marinade the chicken in the sauce several hrs before cooking.
