Macaroni and cheese
- 350 grams macaroni
- 100 grams finely chopped ham
- 45 grams butter
- 45 grams plain flour
- 450 ml whole milk
- 1 pinch grated nutmeg
- 45 1/2 grams Gruyere
- 45 1/2 grams Compte
- 60 grams Parmesan
- 150 grams mascarpone
- 1/2 tsp ground black pepper
- 20 grams Parmesan
- 40 grams breadcrumbs
- Cook macaroni according to packet instructions and put to one side.
- Melt butter in pan, add flour and cook for one minute.
- Add milk, nutmeg and black pepper and stir constantly for about 6 minutes.
- Add grated cheese until melted and then add mascarpone.
- Add sauce and ham to macaroni and stir until thoroughly mixed.
- Spread mixture into baking dish and sprinkle breadcrumbs and grated parmesan on top.
- Grill under a hot grill until golden and bubbling.
