Roasted Pork Loin

  1. Combine herbs & spices with olive oil and rub on roast.
  2. Roast in 425F oven for 20 minutes.
  3. Lower to 325 until pork reaches proper internal temperature.
  4. 3/4 of the way through cooking process mix the dijon and honey to your desired taste and glaze loin.
  5. Continue cooking about another 20 minutes.
  6. Glaze loin when done and let rest in oven for 10 minutes.
  7. Make sure to turn oven off and Crack open door.
