Curried Goat Stew Recipe

  1. Season meat with salt, pepper and curry, set aside for one hour.
  2. Heat shortening in large saucepan, add in meat and brown lightly; add in onions, cook till wilted.
  3. Add in chicken broth and chili peppers, cover and simmer over low heat 1 1/2 hrs.
  4. Skim excess fat.
  5. Add in potatoes and cook 20 min more till potatoes are fork tender and the gravy thickens.
  6. Serves 4-6.
  7. For an Italian touch, substitute 2 cloves crushed garlic for curry pwdr, and add in minced parsley over meat with the chili pepper being optional.
