Orange-Cannoli Refrigerator Cake

  1. Zest the orange; reserve zest for later use.
  2. Cut white membrane off orange; discard.
  3. Cut fruit into sections, then cut each section in half.
  4. Beat cream cheese, ricotta, sugar and vanilla in large bowl with mixer until blended.
  5. Add chocolate and reserved orange zest; mix well.
  6. Gently stir in 2 cups COOL WHIP.
  7. Spread 2 cups cream cheese mixture onto bottom of 13x9-inch pan.
  8. Top with layers of 30 wafers and half the remaining cream cheese mixture; repeat layers.
  9. Cover with remaining COOL WHIP.
  10. Refrigerate 4 hours.
  11. Top with orange sections and remaining wafers just before serving.
