Ratatouille Pasta Salad
- 1/2 gal. cooked rotini pasta
- 2 cups plum tomatoes, grilled, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup eggplant, grilled, chopped Safeway 1 ea For $1.28 thru 02/09
- 1 cup yellow squash, grilled, chopped
- 1 cup zucchini, grilled, chopped
- 1 cup canned artichoke hearts, well drained, quartered
- 1/2 cup oil-packed sun-dried tomatoes, drained, diced
- 1/2 cup roasted red peppers, julienned
- 1/2 cup pine nuts, toasted
- 1 cup fresh basil, chiffonade
- 1/2 cup fresh flat leaf or Italian parsley, chopped
- 1 tsp. crushed red pepper
- 1 cup Kraft Sundried Tomato and Oregano Dressing
- 1 cup Kraft Shredded Asiago
- to taste salt and black pepper
- Combine all ingredients except dressing, cheese, salt and black pepper in large bowl.
- Add remaining ingredients; mix lightly.
- Serve immediately.
- Or cover and refrigerate several hours or until chilled.
