Fried Green Tomatoes in Shrimp Beurre Blanc

  1. For Fried Tomatoes: Dip tomatoes first in butter milk.
  2. Then dip into dry ingredient mixture of corn meal, flour and your spice choices.
  3. Fry in oil of choice (I did it in just a pan) for about 3 minutes each, until brown and crispy.
  4. For Blanc Sauce: First roast a whole garlic by cutting the top off.
  5. Put garlic on a pan covered in tin foil and drizzle olive oil over the top.
  6. Bake at 350 degree for about 25 minutes.
  7. Its done when you can just squeeze the cloves out and they are soft.
  8. Saute shrimp in a little butter until pink and set to the side.
  9. Squeeze garlic cloves into pan and add wine and lemon juice.
  10. Cook on medium heat until its reduced by about 50% to 75%.
  11. Add whipping cream and simmer on medium low heat for about 10 to15 minutes.
  12. It will thicken just a little.
  13. Add butter and stir until smooth.
  14. Add bacon, shrimp salt, pepper, and ground red pepper and cook until warm.
  15. Smother tomatoes in sauce and serve.
