Smoked Turkey And Watercress Sandwiches Recipe
- 8 pita bread rounds
- 1 1/2 lbs. sliced smoked turkey
- 2 watercress bunches, trimmed
- 8 plum tomatoes, sliced
- 1 c. walnuts, minced
- Curried Apricot Mayonnaise
- Preheat oven to 350 degrees.
- Place pita bread rounds on baking sheet and heat in oven till just hot, about 5 min.
- Cut rounds in half, forming pockets.
- Place in napkin-lined basket and keep hot.
- Arrange turkey, watercress and tomatoes on platter.
- Place walnuts and mayonnaise in bowls; allow diners to assemble their own sandwiches.
- 8 servings.
