Carrot Soup

  1. Cook and stir onions in dressing in large saucepan on medium-high heat 5 min.
  2. or until onions are tender.
  3. Add carrots, broth and cumin; mix well.
  4. Cook 10 min.
  5. or until carrots are tender, stirring frequently.
  6. Cool slightly.
  7. Blend broth mixture in blender container until pureed.
  8. Add 1/4 cup sour cream; blend until smooth.
  9. Ladle soup evenly into 4 soup bowls; top each with 1 Tbsp.
  10. of remaining sour cream.
  11. Serve with crackers.
