Pieczarki Nadziewane (Stuffed Mushrooms)

  1. Preheat oven to 400F (200C).
  2. Grease 9 to 10 inch sqaure baking dish.
  3. Seperate mushroom caps and stems; set caps aside.
  4. Finely chop stem pieces.
  5. Melt butter over medium heat.
  6. Add onion; saute until soft, about 3 minutes.
  7. In bowl, combine sauteed onion, chopped mushroom stems, bread crumbs, sour cream and hard-cooked egg.
  8. In a bowl, beat egg with fork.
  9. Add to onion mixture.
  10. Stir in parsley, salt and pepper until blended.
  11. Pack about 1 rounded teaspoon stuffing mixture into each reserved mushroom cap.
  12. Arrange, stuffing-side up, in greased dish.
  13. Place 1 cheese square on each cap.
  14. Bake, uncovered, 20 to 25 minutes.
