Peaches and Tarragon With Mascarpone Cream

  1. n a medium bowl, combine thawed peaches, tarragon leaves and orange liqueur.
  2. Set aside to macerate.
  3. In a medium mixing bowl, use a hand mixer to mix mascarpone cheese and sugar until creamy.
  4. Whisk in thawed whipped topping.
  5. Divide half the mascarpone cream among 6 parfait glasses.
  6. Top with peach tarragon mixture.
  7. Top with remaining mascarpone cream and sprinkle with crushed biscotti.
  8. Scatter almonds over and serve.
