Hearty Creole Bean Soup Recipe

  1. Cover beans with water.
  2. Soak beans overnight.
  3. Strain off beans and rinse.
  4. Add in 10 c. water to beans in a large kettle and bring to a boil.
  5. Turn heat back to simmer and cook for 2 1/2 hrs or possibly till beans are almost soft.
  6. Add in onion, celery, carrots, zucchini and ham and cook another hour.
  7. Crumble bacon and add in to soup, salt and pepper to taste.
  8. Yield: 18.
