Roast Chicken
- 1/4 cup olive oil, extra virgin
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 2 bay leaves
- 1 stock cube
- 3 tbsp boiling water
- 1 whole chicken
- 2 tbsp butter
- 1/4 tsp crushed chilli's (optional)
- 2 garlic cloves, crushed
- Preheat oven to gas mark 7.
- Mix the stock cube with hot water.
- Then mix in the bay leaves, olive oil, salt and pepper.
- Place chicken on a large tray.
- Then pour the mixture on top.
- Add the butter, then sprinkle with the chilli.
- Crush the garlic and add to the tray.
- Cover well with foil and transfer the tray to the preheated oven.
- Roast for 1 - 1 1/2 hours.
- Bare in mind times will vary depending on the oven used.
- Remove foil about 40-50 minutes after placing in the oven.
- Let the chicken roast uncovered for the remainder of the time.
- When cooked remove from oven and let chicken rest for up to 20 minutes covered with foil.
- Serve with gravy and roast potatoes.
