Vickys Chocolate Chip Paradise Pie
- 225 grams cookies made into crumbs - digestives, graham crackers etc
- 4 tbsp sunflower spread / butter, melted
- 3 tbsp granulated sugar (depending on the type of cookie you may not need any sugar)
- 60 grams chocolate chips - I use Moo-Free brand, Enjoy Life brand or Eat Allergy Safe brand
- 120 grams gluten-free / plain flour
- 50 grams granulated sugar
- 1 tsp baking powder
- 160 ml coconut milk
- 2 tbsp olive oil
- 2 tsp vanilla extract
- 60 grams chocolate chips
- 25 grams desiccated / shredded coconut (optional)
- 30 grams finely chopped walnuts (optional)
- Preheat the oven to gas 4 / 180C / 350F and grease a 6" x 8" ovenproof dish
- Combine the cookie crumbs, butter and sugar for the base layer together and press into the bottom of the greased dish
- Sprinkle the chocolate chips on top and bake for 5 minutes until the chocolate has melted, then spread it over the top of the base with the back of a spoon
- Whisk together the flour, sugar and baking powder then beat in the milk, oil and vanilla until smooth
- Fold in the coconut, chopped walnuts and chocolate chips
- Pour the batter over the base and return to the oven to bake for 35 - 40 minutes or until a toothpick tests clean
- Serve straight out of the oven with ice cream, chocolate sauce and caramel sauce
