Chocolate Drop Cookies

  1. Preheat oven to 350F.
  2. Cream shortening and sugar with electric mixer (stand or handheld).
  3. When light and fluffy, beat in egg yolks and melted chocolate.
  4. Sift together flour, baking powder, baking soda, and salt.
  5. Add dry ingredients to creamed shortening alternately with milk, starting and ending with dry mixture.
  6. Beat egg whites to stiff peaks in a separate bowl.
  7. Fold beaten egg whites into batter by hand; fold in walnuts if using.
  8. Drop teaspoonfuls of cookie dough onto greased cookie sheets.
  9. Bake 7-9 minutes until edges of cookies are slightly crisp.
  10. Cool briefly on cookie sheet, then transfer to a rack until completely cool.
  11. Store in airtight containers.
