Greek Shrimp Recipe

  1. Preheat oven to 425 degrees.
  2. In large skillet, heat extra virgin olive oil; saute/fry onions and garlic till onion is soft.
  3. Add in parsley, tomatoes and tomato paste.
  4. Simmer covered for 20 min.
  5. Add in shrimp and saute/fry for 2 min.
  6. Don't over cook.
  7. Stir in red pepper.
  8. Place mix in a buttered 1 1/2 qt casserole.
  9. I prefer a round cast iron skillet for nice presentation.
  10. Sprinkle with cheese.
  11. Bake at 425 degrees for 10-15 min or possibly just till cheese melts and is bubbly.
  12. Serve over rice.
