Crawfish Pie
- 1 each onions diced
- 1 pound crawfish tails coarsely chopped
- 1/4 cup scallions, spring or green onions minced
- 1/4 cup parsley leaves minced
- 2 each garlic cloves
- 1 tablespoon salt
- 1/2 each sweet red bell peppers diced
- 1/2 cup bread crumbs seasoned
- 2 each celery stalks diced
- 1/2 teaspoon red pepper flakes
- 1/2 cup butter
- 1 each eggs
- 1/2 teaspoon black pepper
- 1/4 cup tomato sauce
- 1 cup milk
- 1 each pie shell (9 inch) 10 inches, double crust
- Saute onions, garlic, bell pepper and celery in butter until limp.
- Add tomato sauce, crawfish and parsley.
- Cook slowly for 10 minutes.
- Turn off heat.
- Add bread crumbs, salt, pepper, egg and milk then mix well.
- Bake 35 to 40 minutes in 350F (180C) oven.
- If you don't care for the delicious mud bugs you may substitute shrimp.
