Onion Pie
- 2 packages (or Sleeves, About 4 Oz. Each) Ritz Crackes, Crushed
- 1- 1/4 stick Butter, Divided
- 1 Tablespoon Olive Oil
- 2 pinches Salt And Pepper
- 18 teaspoons Cayenne Pepper
- 2 whole Eggs
- 3/4 cups Milk
- 1/4 cups Cheddar Cheese, Shredded
- Preheat oven to 350 degrees.
- Saute onions in 1/2 stick butter and the olive oil until golden.
- Add salt and pepper and cayenne when the onions are almost done.
- Mix the remaining 3/4 stick butter, melted and crushed Ritz crackers.
- Press in a pie plate to make a shell.
- When onions are done and have cooled for a few minutes, add them to the pie shell.
- Beat eggs, milk and a little more salt and pepper together and pour over onions.
- Grate the cheese and add to the top.
- Bake for 30 minutes.
- Let cool for at least 10 minutes before serving.
