Chrissy's Irish Soda Bread
- 6 cups flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 12 cup sugar
- 1 teaspoon salt
- 1 12 cups raisins
- 14 cup margarine
- 3 12 cups buttermilk
- caraway seed (optional to taste)
- Preheat oven to 325-350.
- Sift first 5 ingrediants together.
- Blend in margarine.
- Add raisins and caraway seeds.
- Add buttermilk to make a medium soft dough.
- Kneed or mix until spongy; dough will be wet.
- Divide into 2 greased and floured loaf pans.
- Bake for about 1 hour and 15 minutes - knife inserted into center should come out dry.
- Optional - brush top with milk while cooling; will soften crust and make it easier to slice.
- Remove from pans while warm.
