Shrimp Curry (easy)
- 1 lb Large peeled shrimp
- 3 tbsp Soy sauce
- 1 clove of garlic
- 2 tbsp Vegtable oil
- 1 Red bell pepper coarsely chopped
- 1 small onion coarsely chopped
- 2 tbsp water
- 1 pinch of pepper
- 1 tsp curry powder
- in a medium mixing bowl combine shrimp, 2 tablespoons soy sauce, and the garlic.
- stir with wooden spoon until the shrimp are evenly coated.
- set aside for 10 minutes.
- add vegetable oil to a wok or frying pan and set over medium-high heat.
- when the oil is hot add the red pepper and onion.
- cook, stirring constantly until the pepper is slightly softened, about 3 minutes.
- add the shrimp mixture.
- continue stirring and cooking until the shrimp turn pink and are cooked through, about 3 minutes more.
- remove the wok or frying pan from the heat.
- add remaining tablespoon of soy sauce, the water, a pinch of pepper, and the curry powder.
- stir until blended.
- enjoy
