Palm Springs Chile Con Queso Casserole
- 12 tablespoon unsalted butter, softened
- 4 (4 ounce) canschopped green chilies
- 1 12 cups cooked chicken, shredded
- 2 cups grated sharp white cheddar cheese, about 8 ounces
- 2 cups grated monterey jack cheese, about 8 ounces
- 8 eggs
- 1 cup milk
- 12 teaspoon ground cumin
- Preheat oven to 350 degrees.
- Butter a 9x13 baking dish.
- Spread the chiles in the dish.
- Scatter the chicken over the chiles.
- Cover with the cheeses.
- Beat the eggs and milk together.
- Beat in the cumin.
- Pour this mixture over the cheese.
- Bake 30-40 minutes, until lightly browned on top.
- Allow to rest 10 minutes, then cut into squares and serve.
